Progress at the CUP CAKE CAFE

The paint is up, just a little touch up and the paint will be finished. The oven is ordered, Should be here by Wednesday, The menu is coming along. The Gourmet Coffee and tea have been chosen. Next week is hustle week buff the floors get everything arranged, and put in its place. Work on signage  get all the inspections and licenses and then if all goes well soft open on the 13th and grand open on the 17th.  WAIT TILL YOU TASTE THE RASPBERRY SUNSHINE CUPCAKES AND SEE THE CANDY AND COOKIE BOUQUETS

What are the dimensions of a Full Sheet cake?

You will find that this answer varies by an inch or two

Below are the dimensions of the two standard US professional quality sheet cake pans used in commercial bakeries. You’ll see that even they vary.

Full sheet cake = 18 x 24 x 2 inches or 18 x 26 x 2

Quarter sheet cake = 9 x 12 x 2 inches or 9 x 13 x 2

Bakeries bake the full sheet cake in one pan in a commercial size oven. This pan is too large to fit a standard home oven. Most home bakers bake four quarter sheet pans and put them together to form a full sheet cake.

The baked product will be slightly smaller than the pan size, by up to two inches or so because as the cake bakes, it pulls away from the pan = shrinking.

Another variance is that commercial bakeries often use one inch layers and stack them to make two inch high cakes. This is because it saves them the time of splitting the cakes in order to add filling.

The standard finished cake height of a professional bakery sheet cake is approximately 2 inches. This will vary slightly, depending on if the cake contains a fruit or ice cream filling, amount of icing and so forth.

Choclate Candy Making

While working a way at getting The Cup Cake Cafe up and running, Will decided to take a break and try to make a molded piece of chocolate candy. Now you would think that would be an easy job just follow the direction on the back of the Wilton wafer bag. I had a heck of a time at first I thought I just has to  melt the c chocolate in the microwave until it was a liquid form.  Well I got it so hot that it just clumped together, then I learned adding a little Crisco would bring it back to the form i was looking for. Finally after a few tries I got it right and molded a piece of candy. I have decided to try to learn this art so as I learn it I will share my trials and triumphs with our readers. As I found out very quickly, apparently throwing some chocolate wafers from a bag into the microwave and then pouring them in a mold is not the way to a good quality candy. So my education shall begin.

Debbie is taking a leap into the Brick and Mortar Business World, And is going to be Giving Clovis New Mexico it first Cup Cake Cafe and Sweet Boutique. In Progress of getting her store ready now Debbie is going to be providing Gourmet Cup Cakes, Specialty order cakes, Cookie Bouquets, Candy Bouquets and more. Debbie is Finally getting ready to Go out on her own. She is getting out from under the wings of a boss and doing her own thing. Clovis New Mexico is about to get The Cup Cake Cafe. Debbie will specialize in Gourmet Cupcakes And specialty order Cakes along with A few other SWEET SURPRISES.
